Paleo Protein Pancakes

It’s Friday, yay! So let’s call this post #FoodieFriday. Awhile back I dedicated a month to doing the paleo diet. I’m usually not one to stick to things like this but I surprised myself and actually did. If you don’t know what the paleo diet is, basically you can only eat meats, fruits, vegetables, eggs, some nuts and seeds, and healthful oils such as olive, walnut, flaxseed, macadamia, avocado, and coconut oil. I made exceptions every now and then on little things but for the most part I stuck to meats, fruits, vegetables, eggs, and these paleo friendly protein pancakes *heart eyes*.

I already try to be gluten free and dairy free due to thyroid issues (with the exception of queso, a girl just can’t give that up). When I found this Paleo Protein Powder I was super excited to try it! It is soy free, dairy free, gluten free, and has no preservatives or artificial ingredients. The flavors they have are Ancient Cacao, Aztec Vanilla, Plain, Mayan Mocha, or Banana Berry. I got the Aztec Vanilla!

Having a major sweet-tooth I knew that’d be the toughest part about sticking to this diet. The fact that I had to cut out all gluten free bread, cake, muffins, etc., made me want to cry a little UNTIL I found an alternative. Here’s how easy it is:

-3 eggs

-1 scoop of protein powder (sometimes I add a little more if it is too watery)

-a dash (literally only a teensy tiny bit) of vanilla extract

and boom. Mix it all up and you are now ready to make it!

I use honey instead of syrup to keep it more natural and cut down on the artificial flavors and sugars in normal syrup. (Plus, honey is paleo friendly since it’s considered a whole food!!!).

You can add whatever fruit you want on top (not that it’s needed) and somedays if I’m feeling extra fancy I’ll mash up a banana to add to the eggs and protein powder to create the mix. Then you get yummy banana protein pancakes that are a little bit sweeter than the normal ones.

This is seriously my favorite thing to make lately. I have these every morning for breakfast and sometimes even for dinner too if we are being honest!
