What I Eat In A Day | Part 1

Happy Friday everyone! It is the happiest of Friday’s for me because not only did I get all my site issues fixed, but I am finally getting this post up for y’all! A few weeks ago I did a poll on my story asking what kind of post everyone would be most interested in and “What I Eat In A Day” won by SO many votes. So here ya go people!

Let me preface this by saying that it is all about balance. Somedays I have two green juices and all the fruits and veggies and then the next day I have queso and Mexican food for each meal. Seriously, I am addicted to queso. Working on it though haha! I titled this post as Part 1 exactly for that reason. What I eat day to day changes and I want to give you an inside scoop on not only my healthy days, cooking at home, but also what I go for on my days out when I’m not being as strict with what I eat. So get ready for a series of these posts 🙂

I eat gluten free due to a thyroid condition and I also TRY to eat dairy free (with the exception of queso) just because dairy is known to cause inflammation.  Everything I eat from my yogurts, to my milk and certain desserts are all dairy free so if that is something you watch as well, all my meals will be perfect for you! (I feel like I have to mention that I am not a doctor or nutritionist, even though that is a given. Some people freak out when you start talking about stuff like this. This is just what I personally like and what works for me. I am in no way telling you to eat this way too! 🙂

Breakfast

For breakfast I had two cuties, a green juice, and a dairy free vanilla yogurt with banana mixed in it and honeybee pollen sprinkled on top. I love eating cuties throughout the day as a snack too. I go through bags of them so quickly! I’ll put them at the top of my list of food obsessions!

This is the dairy free yogurt I eat and I can’t get enough of it! SO yummy. I really love the vanilla and never stray from it but they also offer a lot of other options too if vanilla isn’t your thing. I get it at Whole Foods but I’m sure they have it at other stores as well. They have a plain flavor, which I really am not a fan of at all because guess what? It’s super plain. Didn’t see that coming huh? They also have peach, blueberry, strawberry-banana, and raspberry to choose from. The only other one I’ve tried is the blueberry, but Vanilla is still the best in my book. I also like to chop up a banana in the yogurt and add a sprinkle of bee pollen. What is bee pollen you may wonder and what are the benefits? Good question for google! Here’s what we found:

Bee pollen contains vitamins, minerals, carbohydrates, lipids, and protein. It comes from the pollen that collects on the bodies of bees. It can be used as a natural dietary supplement as well as in skin softening products. It is even known to potentially improve asthma and allergies. WARNING: Don’t eat if you have pollen allergies or if you are pregnant.

If you follow me on instagram then this is the famous juicer I’m always talking about! You can get it at Wal-Mart or Target. I use it multiple times a day and have become obsessed with juicing. It’s really good if you are not a fan of vegetables because then you can still drink them and get the benefits but in a yummy juice instead!

In this juice I used spinach, celery, apple, and some lemon. I really like the Organic Girl baby spinach and I repurchase it multiple times a week from Whole Foods.

These juices are super tasty despite how gross some people may think they look. The fruit really sweetens it up so it doesn’t taste like you’re drinking straight vegetables and you can also add other sweeter foods to fit your preference! I personally drink this mixture once a day though.

Lunch

For lunch I made a salad and added onion and chicken. I am so picky when it comes to salad but I have found the yummiest dressing that makes it so good! My favorite is the Greek Dressing from Zoe’s Kitchen. If you have never tried it then you need to pronto! It will change your life!

You’ll see a trend in these type of posts, I love the brand Organic Girl. I use this true hearts romaine lettuce for all my salads. I try to make one at least once a day whether that be lunch or dinner.

Dinner

Anyone else a fan of breakfast for dinner?! My favorite thing ever! Another one of my go-to’s is this egg sandwich with Vegenaise (it’s like mayo but soy free). I also had some blueberries and a glass of orange juice. Yes, I’m drinking orange juice out of a wine glass because all the other cups were washing haha! Keeping it real over here on the blog.

These gluten free hamburger buns are basically the only “bread” type thing I eat. They are so good and you can find them at Whole foods as well. I was super iffy about this Vegenaise at first but after I tried it I was hooked. Tastes just like mayo!

Throughout the day I also might make a smoothie or snack on more fruit because it is my favorite! I also really love Skinny Pop Popcorn. The other day I literally ate three bags of it in one sitting, no regrets! I have a bad habit of eating when I’m bored and not even hungry. So I’ve been trying to drink more water to counteract that. My goal is a gallon a day. I haven’t done it yet but that’s what were going for!
