Fitness Story + Vegan Taco Recipe

This picture is a little misleading considering the fact that I haven’t stepped foot in the gym in months – and if I did it was only to power walk on the treadmill or attempt the bike for 15 minutes. Lame, right? It is a completely different picture compared to how my workouts used to go. I used to run miles a day and lift, lift, lift. Yes, I was one of those annoying people who ENJOYED running and looked at is as my biggest stress relief. I would go to the gym once, even twice a day most days, because I genuinely loved it.

Fast forward to now and I miss that more than anything. Awhile back I found out that I had a slipped disc in my back and had worn down the cartilage in my hip – which was causing all these hip and back issues that turned my upbeat workouts into a painful event. No more running miles upon miles, squatting to get that perfect booty, or even bending the wrong way because you guessed it. OW.

For awhile I would just power walk on a treadmill or lift light weights but noticed after a bit that even that would aggravate something. My theory is that the twisting and exchange of weight from power walking (on an incline) aggravated my back because guess what? I also found out my hips are misaligned. So I just feel all sorts of off.

Not only was I disappointed that my main stress relief was being taken away from me (at least at the intensity that I was used to doing it) but I also was stressed out about gaining weight because ya girl loves queso and carbs. A lot. The months up until November I ate like crap. By crap I mean queso multiple times a week, ate tacos like my life depended on it, and would drink margs at dinner/have wine nights. Not only did I feel like I had gained a few pesky pounds, but I didn’t FEEL good. I felt sluggish, my anxiety was at an all time high, I suffered from insomnia and woke up multiple times a night with trouble sleeping. Something wasn’t working.

I decided I wanted to change, mainly to see if changing my diet could help with my anxiety and overall well being. I follow Medical Medium and he has so many great tips to health and ways to help heal yourself. I totally recommend following him on Instagram, he has changed so many peoples lives. After doing some research and reading other peoples health testimonies I decided that I needed to go Vegan. Now don’t roll your eyes, there is some healing proof behind this way of eating. I plan to do another post showing you a full day of eating so stay tuned for that. It’s not as hard as you might think.

I didn’t know if I would stick to this lifestyle but after seeing how amazing I felt doing it for just a week, I was hooked. My main concern was my craving for tacos. Forever a taco lover! I made a few simple tweaks and now I eat tacos everyday! Basically all I had to substitute was the chicken and cheese. So here’s my go to recipe that I either have for lunch or dinner everyday. Mainly because it’s so fast to make!

These are the best tortillas! These are gluten, dairy, and soy free. I’ve noticed that it is hard to find the Cashew Flour (the only place I’ve seen them is the Whole Foods in Plano) but all locations carry the Almond Flour version and those are just fine also! I wrap a few in foil and put them in the oven for a few minutes and then they’re ready to go!

The ingredients I use: Avocado, Jasmin Rice, Black Beans, Sweet Corn, and Marinara Pasta Sauce. You might be questioning the marinara but TRUST ME! It makes it that much better, just give it a try! I cut up the avocado and spread it on the tortilla then add everything in. Typically 1 cup of rice will make me 3 tacos. Who says you can’t be vegan and stuff your face with tacos?! Not me! #yum

Here is the finished product! So good and literally takes less than 5 minutes to heat everything up. Give it a try and let me know what you think! I know you’ll love it! 🙂
